Char-grilled Rib of Red Poll Beef

For the Beef
1 Rib of Red Poll beef
Sea Salt
Olive oil
For The Garnish
80g unsalted butter
200g French beans
10 button mushrooms, cut in half
200g mixed wild mushrooms
4 shallots finely chopped
Tablespoon white truffle oil
Method
Season the Rib with the olive oil and Sea Salt
On a char-grill or BBQ seal the rib of beef for 3 minutes on both sides
Transfer to an oven pre heated to 180c and cook for a further 16 minutes (this is an approximate time for medium rare)
Blanch the French beans in well seasoned water, the plunge into iced water to stop the cooking process, drain and set aside
Put about 80g of unsalted butter in a frying pan, when foaming add the diced shallots
Stir and cook gently for about 2 minutes, ensuring the shallots do not colour
Now add the button and wild mushrooms and cook until tender
When mushrooms are tender add the French beans and truffle oil to the pan, continue to stir until the beans are hot
When the Rib is cooked remove from the oven and rest on a tray for at least 5 minutes
Pour any juices that have come out of the meat into the pan with the beans
To serve
Put French beans and mushrooms on a large plate, slice the Rib and place on top of the beans
Serve with all or some of the following garnish:-
Béarnaise sauce
Peppercorn sauce
Chips
Onion rings
Roasted tomatoes
Garlic Mushrooms
